I found out about this awesome way to preserve fried morels so that they taste almost fresh picked in the middle of winter.
Lightly flour them and fry in butter until they are about half done. Then drain them on paper towels. When they are cool, put them in a single layer on a plastic wrap covered cookie sheet and freeze. After they are frozen place in a single layer and vacuum pack them. The more air-free you can get the bag the better. When you want to use them, heat up the butter and place them in frozen (they turn out better if you don't let them thaw first). Finish cooking like you normally would.
The hardest part of this is not eating all of them before you can freeze them. It is so worth it though to have fried morels in January. ;D
