You will need:
- A small handful of cleaned Chanterelles - 3 eggs - 1/4 stick of chorizo
Directions:
After washing and slicing the mushrooms, place in a small frying pan with enough water to cover the caps. I only use the caps. Bring to a low boil and let sit until most of the water has evaporated.
Before all of the water is evaporated, turn down the heat to medium-low and throw in your chorizo. As the water evaporates, and the chorizo starts to fry, flatten the chorizo with a fork. This will help separate it and allow the oil to come out. Fry the chorizo until it starts to brown. You may have to move the mushrooms to the edge of the pan and add a bit of water while frying, so the mushrooms don't over-cook.
When the chorizo is done, turn down the heat some, and crack the eggs directly into the pan. Break the yolks with the fork and scramble the chorizo into the mix. Continue to mix with fork as the eggs cook, to distribute the ingredients evenly.
This should only take several minutes to cook. After that, season to taste and enjoy.
