Last night I brought home a pike and a largemouth and decided the bass would be a good meal... while the pike was cleaned and frozen for another day! filleted and prepped I made my own fish fry batter... this is how I did it. 4tbl spoons orgainic local wheat flour 2tbl spoons organic local corn flower 1 cup dried chantrelles ground to a powder 2 teaspoons garlic powder 1 teaspoon seasoned salt ground pepper to taste. this worked well for me, it was more like a catfish fry than a fluffy beer batter fry but I am trying to make my own fish fry breading and trying several things out. Anyone have any thoughts on how to improve? ps... I dont have a pic of the fried fish but here is yesterday's catch...

Did you have a liquid in your mix or did you put it on dry?

I used almond milk on the fish after patting the fillets dry... I dont handle regular milk well. Usually I will use a beer if I have some handy but I ran out Friday night!

I would recommend adding the ground chants to your wash. Let it sit in the almond milk for a couple of hours. Maybe try adding some egg to this mixture as well. The chants then can hydrate and flavor the fish. Adding dried shrooms to your breading is good, but the hot oil has a tendancy to destroy the flavor before it has a chance to flavor the fish. Also a little lemon zest added to the breading adds a freshness to the breading. Or,.... just use some P. Dickey's Healthy Shrooms or Chanterelle Seasoning. lol. Good luck.

Hmmm to the wash... I don't use eggs because I don't have chickens... I've started a year of eating only meat I can obtain without purchasing... already bartered a few things for some Lamb!
