So...used to be the bar manager at Brasserie V and came up with this one night after work after bringing in my morels:
Ingredients: -Buttermilk pancake mix -1 or 2 very dark belgian beers (1 for drinking, one for cooking) -1 long tube of chevre goat cheese (flavor of your choice) -1 package of Philly cream cheese -1 bundle of green onions -1 lemon -Couple cloves of garlic -1 bundle of your favorite herb -1 ziploc bag -Salt and Pepper -1 pound of morels
Directions: -Clean your morels quick to get the dirt off, set them aside to get the water off them
-Dice the green onions, herbs, and garlic -Zest the lemon -Blend the goat cheese and cream cheese together, add the herbs, zest and the juice of half the lemon. Salt and pepper to taste. -Fill the mix into a ziploc bag with a spatula and squeeze down like a pastry bag and cut a very small hole in the corner. -Using small morels (big won't work, usually 4-5 in grays work best) fill the morels with the mix until they puff but the mix doesn't come out of the sides of the morels...set aside.
-Mix the pancake batter by eye with dark beer until thick but not too runny.
-Bring all next to a deep frier (or deep pot with a lot of oil) -Dunk the stuffed morels into the batter, coat fully, and let sit for a second so the batter takes hold of the morel. -Drop into frier after a couple minutes till golden brown
*You can flash fry these, freeze them on a sheet tray in a freezer, then vac seal them and put them in the oven at your leisure.
