DD - I'll be back on here in February somtime because people start talking about collecting maple sap! I started that hobby last year and it is really cool.
TIPS FOR EVERYONE - Locate all the sugar maples as fast as you can right now before the leaves fall off, then ask the owners (in your hood, wherever) if you can tap the tree in February. Then, put it in your calender for February or you might forget. I made up a REALLY CHEAP way of tapping last year, that's also very easy, keeps sap super clean, and collects nearly five gallons at a time! The early sap is the best they say. Hmmm...last year it was STEVE from DANE that put out all kinds of great tips about when and how. Hopefully he is on this board as well. Basically, the sap flows when the night lows start going ABOVE freezing (32F). In the beginning it will start and stop, start and stop but the early kind, as I said, is the lightest in color and supposedly the "best" but I can assure you, any homemade maple syrup is fabulous!
Happy Winter Everyone!!!

I guess I wouldn't quite give up, yet. For what it's worth, I live just barely across the border on the Illinois side from Wisconsin. I've got oysters and a few shiitakes growing really well in some innoculated logs, so maybe there still some reason to go poking about the woods.
I don't know if I'll be able to keep with (eat) all the oysters or not, but I'm going to try! I'm making up for last year when I seemed to find oysters about one - two weeks too late. I just got done making a couple of homemade pizzas with oysters--yummy!

Do you just throw the Oysters raw onto the pizza before baking? I tend to dislike the chewy texture, but perhaps after baking the texture has changed?

I've normally fry them up first, but not quite all the way, and I find that if you slice them up small enough they really aren't that chewy, very similar to portabellas on a pizza, but I like them a little better.

I'll have to try that. They're everywhere.

Have you been finding oysters? I haven't been out yet to look, but I am planning on taking a walk today!
Took a walk today, but didn't look very hard. I didn't find anything interesting.

Just checking in. Can't wait to get out and start looking. Maybe in another week or two the action will start happening. Going to try and find some new turf this year. Last year I found a new patch near where I was living. The old faithfuls didn't produce much. Might let them go this year.
Looking forward to a good season. Fingers crossed.
